A twist on an old classic, this Curried Egg Salad makes delicious sandwiches—great for a light summer dinner.

Fast and easy to make, you may also want to try Curried Egg Salad:

  • Scooped onto spinach leaves dressed with Lime Chutney Salad Dressing
  • Layered in thin slices of bread with crusts cut off to make tea sandwiches
  • On pita bread with chopped romaine lettuce
  • Dolloped on a whole grain cracker and topped with scallions as a canapĂ©

Curried Egg Salad Recipe

8 hard boiled eggs, peeled
4 tablespoons mayonnaise
3 tablespoons plain yogurt
1 teaspoon curry powder
Dash cayenne pepper
Kosher salt and freshly ground pepper to taste

  1. In a medium bowl mash hard boiled eggs with a fork or potato masher.
  2. Add remaining ingredients and stir to blend. Serve immediately or cover tightly and store in refrigerator.

Serves 4.
