When life gives you lemons, you make lemonade. And when guests give you non-vintage Champagne, you make Classic Champagne Cocktails.

Let’s face it, 2009 was a lemon of a year for many of us. What better way to boot out the bad old annus—and toast in the new—than with this frugal, festive drink?

A lump of sugar, dash of bitters and splash of brandy turns lackluster Champagne or Champagne-style wine into something special. And because these potent, aromatic drinks don’t dent your pocketbook you can pour them generously for family and friends.

This evening I’m raising a Classic Champagne Cocktail to you: I wish you a happy New Year filled with good friends, good drinks and good scratch-cooked food shared with me right here at Copywriters’ Kitchen.

Classic Champagne Cocktails Recipe

For each cocktail you’ll need:
One cube of sugar, preferably Demerara
Dash of Angostura bitters
Splash of brandy
4-6 ounces Champagne or Champagne-style sparkling wine
Twist of lemon zest

  1. Into a flute or saucer-style Champagne glass, place sugar cube.
  2. Splash one or two drops of bitters onto the sugar cube.
  3. Pour a splash of brandy over the sugar cube.
  4. Pour champagne over sugar and brandy.
  5. Top with twist of lemon.
